GRILLED CARIBBEAN CHICKEN SOUP TOMATO


All Caribbean flavor in this rich and healthy chicken, perfect accompaniment to whatever you want, with only 249 calories per serving. Ingredients

4 chicken breasts without skin or bone
1 tsp chopped cilantro 1 tsp

ground ginger 1 tsp paprika 1 tsp pepper

½ tsp cayenne pepper
1 lemon, grated
1 tbsp olive oil ½ large onion, chopped

1 red pepper, seeded and julienned
1 tbsp grated fresh ginger
To
the sauce: ½ tsp

zest
minced ¼ cup orange juice 2 tbsp
of
fresh lemon juice 1 tbsp cornstarch 2 tbsp

hot sauce ¼ tsp ground black pepper
1 / 8 tsp ground nutmeg
20 g of fresh mint leaves for garnish Preparation

In a large bowl, combine the cilantro, ginger, paprika, peppers and lemon zest. Add chicken and shake to coat well. Reserve for 15 minutes.
In a large skillet heat half the oil and when hot add the onions, garlic, chives, pepper and ginger, cook, stirring, for 2 or 3 minutes. Pour into a container.
Pour the skillet and heat remaining oil over medium heat, add the chicken and cook, stirring for 2 to 3 minutes.
