RICE WITH SMOKED FISH

Ingredients:
1 / 2 onion 1 clove garlic
4 cups chicken broth 2 cups rice
1 / 2 cup and 4 tablespoons olive oil
3 tbsp lemon juice
4 tbsp finely chopped parsley
3 / 4 cup shredded smoked tuna and
Preparation:
Blend onion, garlic and broth
Fry the rice in 4 tbsp oil, when transparent, Drain and pour the broth, cover the pan and cook over low heat.
Mix lemon juice with the remaining oil, salt & pepper. When the rice is cooked and cold, add this mixture and combine with smoked fish. Let stand a few minutes and serve
